Made from a mash bill of 100% Danish rye and barley—floor-malted on site—Stauning Rye stands out for its artisanal production, grain-to-glass ethos, and distinct Nordic character.
Bottled at 48% ABV, it is non-chill filtered and naturally coloured. Stauning Rye is a purist’s dream—robust yet refined. It’s a prime example of new world whisky done right, challenging perceptions and setting new benchmarks for rye outside North America. Double-distilled in small copper pot stills and aged in new American oak barrels, this whisky offers a vibrant, full-bodied flavour profile. Stauning Rye is distilled in open-fired stills, creating complex and deep flavours thanks to the fact that a still heated this way will reach significantly higher temperatures (up to 650˚C). This causes any solids in the wash to stick to the inner surface of the copper, in the same way as steak placed on a hot griddle pan will start to brown. This Maillard-type reaction inside the still will help create a range of different flavour compounds, such as those found in chocolate, caramel, and roasted nuts.
