The Jack Daniel's Distillery sits in the small town of Lynchburg, Tennessee, and its history stretches back to the mid-19th century. It was founded by Jasper Newton "Jack" Daniel, born in 1849, who developed a passion for whiskey-making early in life and learned the craft under local Lutheran minister Dan Call.

In 1866, Jack Daniel officially registered his distillery, making it the first registered distillery in the United States. He built it near a limestone cave spring, which provided a pure and consistent water source critical to producing high-quality whiskey.

Prohibition and Survival

The distillery faced its biggest challenge with the onset of Prohibition in 1920. Nationwide production of alcoholic beverages was banned, forcing operations to cease. The brand survived by selling whiskey for medicinal purposes, one of the few legal avenues available at the time.

Post-Prohibition Revival

After Prohibition was repealed in 1933, the distillery resumed operations. The key to Jack Daniel's is its distillation process. The brand is defined by its charcoal mellowing technique, known as the Lincoln County Process, which involves filtering the whiskey through ten feet of sugar maple charcoal. This imparts a distinctive smoothness and flavour that sets Tennessee whiskey apart from bourbon and other whiskey styles.

It's a process that hasn't changed much since Jack set it up, and that consistency is exactly what keeps people coming back.

The Mash

Jack Daniel's runs on a mash bill of 80% corn, 12% malted barley, and 8% rye. Corn brings the sweetness, rye adds spice, and barley helps the fermentation along.

Sour Mash Fermentation

Like most American whiskey, it uses a sour mash process. A portion of the leftover mash (called backset) from a previous batch is added to the new one. This keeps the pH consistent and the flavour steady, batch after batch. Fermentation runs 4 to 6 days.

Distillation

Once fermented, the wash is distilled to produce new-make whiskey, sometimes called white dog. Clear, strong, and not ready for drinking yet.

Charcoal Mellowing (Lincoln County Process)

Before it goes anywhere near a barrel, the whiskey is filtered drop by drop through 10 feet of sugar maple charcoal. This step alone can take the better part of a week, and it's what separates Tennessee whiskey from standard bourbon.

Barrelling and Ageing

From there it goes into new, charred American white oak barrels, used once and never again, and rests in barrelhouses around Lynchburg. Tennessee's temperature swings push the whiskey in and out of the wood, picking up colour and flavour along the way: oak, caramel, vanilla.

Bottling

Once it's ready, the whiskey comes out of the barrel, gets checked, and is bottled right there in Lynchburg, the same town Jack started in over 150 years ago.
