Overview

25 best bourbons of the 21st Century...Robb Report

Dareringer is a wheated Kentucky bourbon finished in Pedro Ximénez sherry casks, made by the team behind Louisville's Rabbit Hole Distillery. Here in Australia it wears the Rabbit Tale name. The bourbon starts in heavily charred new American oak, then moves into PX casks from the Casknolia cooperage in Spain to pick up rich, dried-fruit sweetness.

Wheat in the mash keeps it soft and easy, and the sherry casks add raisins, currants, and dark cherry on top of the caramel and vanilla. It’s bottled at 46.5%, non-chill filtered, and no more than 15 barrels go into each batch. Robb Report named it one of the 25 best bourbons of the 21st century, so it’s not just a pretty bottle.

Distillery Information

Rabbit Hole/Rabbit Tale was founded by Kaveh Zamanian, who built the distillery on East Jefferson Street in Louisville, Kentucky. The distillery is known for doing things a bit differently, with its own mash bills, toasted and charred barrels, and cask finishes. Dareringer is its PX sherry cask-finished bourbon and one of the most recognisable bottles in the range.

Why we curate it

Plenty of distilleries do sherry finishes. Not many nail it like this. Dareringer keeps the soft, easy feel of a wheated bourbon and adds a proper layer of dried fruit and sweetness on top. Easy to enjoy whether you’re new to bourbon or already have a few favourites. A bloody good pour, and one worth having on the shelf.
