Redbreast Lustau Edition is the result of a direct collaboration between two of the most respected names in their fields — Midleton Distillery in County Cork and Bodegas Lustau in Jerez, Spain. The whiskey follows the classic Redbreast recipe: triple-distilled Single Pot Still spirit, matured first in a combination of ex-bourbon and ex-sherry casks. Then it takes a detour not available to the standard 12, a finishing period of approximately one year in first-fill Oloroso sherry butts hand-selected from Lustau's own solera in Jerez.

That extra year in freshly emptied Lustau butts gives the whiskey a deeper, more overtly sherried character than the core range, and, bottled at 46% ABV and non-chill-filtered, it retains more of the natural texture and flavour that are often stripped out of standard releases. A cult favourite among pot still fans since its 2016 launch.

This expression starts life as a classic Redbreast single pot still whiskey, triple distilled at the historic Midleton Distillery in County Cork. It is then matured in a combination of bourbon and sherry casks before being finished for an extended period in first-fill Oloroso sherry butts from the renowned Bodegas Lustau in Jerez, Spain.

Tasting Notes

Nose

Rich dried fruits up front — raisin, fig, and dark cherry — with layered notes of toasted almond, marzipan, and a generous hit of Oloroso nuttiness. Vanilla and warm oak sit underneath, with the classic pot still spice peeking through.

Palate

Full and creamy with that signature pot still mouthfeel. Sweet sherry fruit arrives first — prune, date, dark cherry — followed by warming pepper and cinnamon spice. Toasted nuts, marzipan, bitter orange peel, and dark chocolate build in the mid-palate. The 46% ABV carries the flavor without burning.

Finish

Long, rich, and lingering. Sherry sweetness fades into gentle oak tannin and warming pot still spice. A nutty, slightly dry character rounds things out and keeps you reaching for the next sip.

Distillery Information

Distilled and matured at Midleton Distillery in County Cork, home to Irish Distillers and the last remaining large-scale producer of true Single Pot Still whiskey. The Redbreast name itself dates back to the early 1900s, when bonder W&A Gilbey of Dublin sold Jameson-distilled whiskey under the Redbreast label — named for the robin that was the chairman's favorite bird.

The "Lustau" half of the name comes from Bodegas Lustau in Jerez, one of the most acclaimed sherry producers in the world and a specialist in traditional solera-aged Oloroso. The partnership brings the whiskey directly into contact with butts that have been actively holding Lustau sherry — not generic "ex-sherry" casks sourced through brokers — and the difference shows up in the glass.

How to enjoy

Neat in a tulip glass is where this whiskey truly shines — the 46% ABV and non-chill filtration give it plenty of body and aroma to work with. A few drops of water will bring the Oloroso fruit and marzipan further forward if you'd like to coax more out of it. Over a single rock is also a perfectly respectable move on a warm evening. For cocktails, it's excellent in a Manhattan or Old Fashioned where the sherry depth adds a real upgrade over standard Irish whiskey — but given the craft involved, we'd steer you toward a neat pour first.
