M&H Apex Terroir – Jerusalem Mountains is a single malt whisky produced by Milk & Honey Distillery. They specifically chose to age whisky in the pine forests of the Jerusalem mountains to exploit the high elevation and chill temperatures so seldom found in Israel. This climate provides a slower and more gentle maturation than our whisky is accustomed to, ensuring that the resulting whisky is light and fresh, with a green natural flavour that reflects its terroir.

Tasting Notes

Nose: Light and fresh with green apple, white pear, and fresh pine needles leading the way. The cooler Jerusalem Mountains maturation is immediately apparent: this is a more delicate, floral nose than you would expect from an Israeli whisky. Underneath, there is a gentle sweetness of honeysuckle, vanilla cream, and a subtle hint of toasted oak.

Palate: Elegant and structured at 55.4% ABV. Fresh malt, green herbs, and orchard fruit sit at the centre, supported by a soft creaminess and a restrained spice of white pepper and ginger. The wine cask influence adds a layer of red berry sweetness and a gentle tannic grip that gives the palate real definition without heaviness.

Finish: Medium-long and clean. Fresh malt and green fruit linger alongside a soft oakiness and a whisper of dried herbs. The finish is notably lighter and more refined than the Dead Sea expression, reflecting the slower, gentler maturation of the Jerusalem Mountains climate.
