Overview

Cavehill is the flagship bourbon from the team behind Rabbit Hole Distillery in Louisville. In Australia, it goes by the name Rabbit Tale. It’s a four-grain bourbon, so alongside the corn you get malted wheat, malted barley and honey malted barley, which gives it a bit more going on than your standard corn, rye and barley mix.

Expect sweet corn, toffee and a bit of orange peel up front, then a peppery kick backed by honey and vanilla. Bottled at 47.5%, so it’s got some punch without being a handful. The name comes from Louisville’s Cave Hill Cemetery, where more distillers are buried than anywhere else in the country. A solid step up from your usual shelf bottle.

Distillery Information

Rabbit Hole (Rabbit Tale) was founded by Kaveh Zamanian, who built the distillery on East Jefferson Street in Louisville, Kentucky. The distillery is known for doing things its own way, with its own mash bills, toasted and charred barrels, and cask finishes. Cavehill is the bourbon at the heart of the range, named after Louisville’s Cave Hill Cemetery, the resting place of more distillers than anywhere else in the US.

In Australia, the name was changed to Rabbit Tale to avoid Copyright issues with an Australian winery.

Why we curate it

Plenty of bourbons stick to the same old recipe. Cavehill doesn’t. Four grains, malted wheat and honey malted barley give it a sweeter, maltier feel with a bit of pepper to keep it honest. Easy to enjoy whether you’re just getting into bourbon or already have a few favourites. Good bourbon, done a bit differently, and one worth having on the shelf.
