Volans Tequila Blanco
Overview
Volans Blanco is the kind of bottle that earns its place on the shelf. Produced at El Pandillo Distillery in Jesús María under fourth-generation master distiller Felipe Camarena, it's built the old-fashioned way, brick hornos, tahona extraction, copper pot stills, and not a single additive in sight.
The agave is Highland-grown in the mineral-rich red soils of Los Altos, Jalisco, an environment that naturally pushes more sweetness and fruit into the plant. The result is a blanco with real character: clean and fresh, but with enough depth to hold your attention. If you're used to blancos that taste like not much, this one's a different conversation.
The Distillery
El Pandillo Distillery sits in Jesús María, in the Los Altos Highlands of Jalisco. Felipe Camarena is the fourth generation of his family to distil here, his ancestors were among the first to farm Blue Weber agave in the Highlands back in the 1800s. That's not marketing fluff; it's genuinely built into the way this place operates.
Volans was brought to life by the Allen family out of Idaho, one of the few American-owned tequila projects where the production side is handled with this much craft. The partnership between the Allens and the Camarena family put serious thought into how this tequila gets made, and it shows in the bottle.
Why We Recommend It
At Bourbon Brothers, we recommend Volans Blanco for customers who want:
- A proper traditional blanco, tahona, brick hornos, copper pot stills
- 100% additive-free production, verified by Tequila Matchmaker
- Highland agave character, sweeter, fruitier, more floral than lowland blancos
- A bottle made by one of the most respected distilling families in Jalisco
If you're after a blanco that's genuinely made the old way without shortcuts, Volans is worth your attention. The traditional production methods aren't for show, you can taste the difference.
Production & Craftsmanship
| Agave | 100% Blue Weber Agave |
| Agave Source | Los Altos (Highlands), Jalisco, estate-grown in mineral-rich red soils |
| Cooking | Traditional brick-lined hornos (ovens), approximately 22 hours |
| Extraction | Mechanical tahona |
| Fermentation | Open-air fermentation in stainless steel tanks with natural proprietary yeast, approximately 4 days |
| Distillation | Double distilled in copper pot stills |
| Additives | 100% additive-free (verified by Tequila Matchmaker) |
| Aging | Unaged (Blanco) |
The tahona extraction is a slower, more labour-intensive process than a roller mill, but it handles the agave more gently and preserves more of the natural plant character. Combined with the brick horno cooking and copper pot distillation, this is about as traditional as production gets for a commercial blanco. The Camarena family has been doing it this way for generations, and they're not changing it.
Tasting Notes
Nose
Fresh cooked agave, citrus, white flowers, and a clean minerality. Light pear and tropical fruit come through from the Highland agave, sweet and inviting without being over the top.
Palate
Cooked agave leads, followed by citrus, white pepper, and a crisp mineral edge. The fruit character from the Los Altos agave stays present throughout, pineapple and lime, with a gentle floral note. More going on than most blancos at this price.
Finish
Clean and smooth with lingering agave sweetness and a light citrus fade. Medium length, refreshing, and easy to go back to.
What Makes This Tequila Special
How to Enjoy
The clean, complex profile makes Volans Blanco a natural fit for a proper Margarita or Paloma, it holds up in a cocktail without disappearing. It's also genuinely worth sipping neat or over ice, especially if you want to get a feel for what Highland agave tastes like from a traditional production. Hard to go wrong with this one, whatever you're pouring it into.
