Thinkers Dew Of B'Dolah is the first bourbon out of Thinkers Distillery, a small operation run out of Jerusalem's Machaneh Yehuda Market. It starts out as a kosher wheated bourbon, hand distilled in Ohio, and that's where most bourbons would call it done. Not this one. The barrels are shipped across the Atlantic and Mediterranean, picking up around six months at sea, before landing in Haifa for another three and a half years ageing in the warm coastal air. Bottled unfiltered, single barrel, it's proof good bourbon doesn't have to stick to the usual script.

What sets this bottle apart

The barrels were allowed to sit undisturbed for four months before being carefully placed on a ship that made a very slow voyage for six months across the Atlantic Ocean and the Mediterranean Sea till it reached Haifa.

  1. In Haifa the barrels were left to age in the open air for another three and a half years until it reached its perfection, and the Thinkers team, working through 7 cool May evenings, hand bottled the entire collection.

Thinkers Distillery is run out of Jerusalem's Machaneh Yehuda Market by owner Bennett Kaplan, who's built the brand around one idea: balance, with every flavour getting its turn. Dew Of B'Dolah is the distillery's first crack at bourbon, and it doesn't take the easy route. The spirit is distilled in Ohio, then makes the trip by ship across the Atlantic and Mediterranean, a journey that adds extra barrel contact along the way, before it lands in Haifa for further ageing in the warm coastal climate. It's bottled unfiltered, single barrel, from a total release of 140 barrels.
