History

Founded in 1935 in Bardstown, Kentucky, Heaven Hill Distillery stands as one of the most important and enduring names in American whiskey. Established just two years after the repeal of Prohibition, the distillery was built by five brothers with a shared belief in quality, patience, and family stewardship,  values that still define Heaven Hill today.

In 1789, Elijah Craig became the first distiller to age his whiskey in new charred oak barrels. Some claim that an accidental fire charred his barrels and changed the whiskey inside. Others say he stored his whiskey in former sugar barrels and was impressed with how charring improved the flavour.

However it happened, Elijah Craig knew he had discovered something great. He continued to refine the barrel charring process, imparting smooth, rich flavour to the spirit that would become known as Bourbon. 250 years later, he is still known as the Father of Bourbon—they craft our Bourbon today using the same time-honoured methods.

Now the largest family-owned and operated distillery in America, Heaven Hill has survived fires, economic downturns, and industry shifts while remaining fiercely independent. From its early days producing traditional Kentucky bourbon to becoming the steward of some of the world’s most iconic whiskey brands, Heaven Hill has earned its reputation as a cornerstone of bourbon heritage.

Distilling Process

Heaven Hill’s approach to whiskey making is rooted in consistency, scale, and time-honoured tradition. Distillation takes place using traditional column stills, with mash bills that have remained largely unchanged for generations. The distillery’s limestone-rich Kentucky water plays a critical role, contributing to clarity, fermentation health, and flavour development.

A defining element of Heaven Hill’s process is its vast aging inventory — the distillery operates the largest concentration of rickhouses in the world. These multi-story warehouses allow barrels to mature naturally over many years, developing deep oak character, caramel sweetness, and classic bourbon spice. Patience is key at Heaven Hill; whiskey is released only when it meets strict flavour and maturity standards.
