Overview

Cenote Blanco is a 100% Blue Weber agave tequila made at the base of the Tequila Volcano in Jalisco. It comes from Stoli Group's own tequila house, built from the ground up on volcanic well water and agave that's left to mature for six to seven years before it's harvested. Nothing rushed about it.

Most blancos go straight from the still to the bottle. Cenote's gets a short rest in oak first, around three weeks, before bottling. That's not long enough to pick up colour or tip it into reposado territory, just enough to round off the rough edges. What you're left with is a clean, citrus forward blanco with a peppery kick and a touch more polish than your usual unaged pour.

That short barrel rest is the interesting bit here. Most blancos never see wood at all. Cenote does, just not for long enough to change the category, only long enough to smooth things out before it goes in the bottle.

Tasting Notes

Nose: Cooked agave up front, with citrus, black pepper and a bit of earthiness underneath.

Palate: Citrus-led with a peppery kick, cooked agave through the middle, and a light touch of vanilla from that brief time in oak.

Distillery Information

Cenote is produced at Fábrica de Tequilas Finos (NOM 1472), sitting right at the foot of the Tequila Volcano. Stoli Group built the brand as a standalone project rather than bolting it onto an existing line, so the agave sourcing, water and short barrel rest have all been planned around one idea from day one.

The water's the real standout. It's drawn from an artesian well on site, naturally filtered through volcanic soil, then run through reverse osmosis and a carbon and silver filtration system. Master Distiller Arturo Fuentes, who's got 35 plus years in the trade including time distilling Cognac in France, puts good water at the centre of the whole operation. Makes sense once you taste it.
