Rabbit Tale Cavehill is a modern Kentucky straight bourbon that showcases innovation in grain selection while staying true to classic craftsmanship. Named after the historic Cavehill Cemetery in Louisville, it reflects the brand’s mission to honour tradition with a bold, forward-thinking twist.

Rabbit Tale  Cavehill is made using a distinctive four-grain mash bill: 70% corn, 10% malted wheat, 10% honey malted barley, and 10% malted barley. This unique blend results in a softer, sweeter, and more layered spirit than traditional rye-heavy bourbons. The grains are all non-GMO and carefully selected to enhance flavour complexity and mouthfeel.

Fermented in open tanks and distilled in copper column stills, Cavehill is then aged for over three years in toasted and charred new American oak barrels, custom-made to enhance caramelisation and depth during maturation. Bottled at 47.5% ABV (95 proof) and non-chill filtered, it delivers bold character with natural texture intact
