The Distillery
Produced by Clase Azul México (NOM 1416) in the Jalisco Highlands, the same high-altitude growing region that gives their agave naturally higher sugar content and a sweeter, fruitier character. The agave is slow-cooked in traditional brick hornos, which builds a deeper, more rounded flavour than faster autoclave methods allow.
