The tahona extraction is a slower, more labour-intensive process than a roller mill, but it handles the agave more gently and preserves more of the natural plant character. Combined with the brick horno cooking and copper pot distillation, this is about as traditional as production gets for a commercial blanco. The Camarena family has been doing it this way for generations, and they're not changing it.
