- Cooking: Clay brick ovens, 79 hours (alternating steam and rest)
- Milling: Dual method - two-tonne volcanic tahona stone wheel and roller mill, run separately
- Fermentation: Small pine wood tanks; approximately 3 days; tahona and roller mill batches fermented independently
- Distillation: Double distilled in copper pot stills; tahona and roller mill spirits blended ~50/50
- Ageing: Silver (unaged), Reposado (2+ months, mixed oak), Anejo (12+ months, small oak), Extra Anejo (3+ years), Gran Patron Platinum (triple distilled, unaged), Gran Patron Piedra (tahona-only Extra Anejo), Gran Patron Burdeos (Anejo, Bordeaux wine barrel finish)
