Don Julio is made at Destilería La Primavera in Atotonilco el Alto, in the Highlands of Jalisco. It was founded by Don Julio González in 1942, when he was just 17 years old. The brand has grown into one of the biggest names in tequila and is now part of the Diageo stable, but the production base remains the same: the Highland distillery.

La Primavera distillery sits in Atotonilco el Alto, a municipality in the Los Altos de Jalisco highlands at approximately 5,200 feet above sea level. The highland terroir (red clay volcanic soils, warm days, cool nights, and significant diurnal temperature variation) produces Blue Weber agave with a higher sugar concentration and a naturally sweeter, more fruit-forward, and more floral character than agave grown in the lowland valley around Tequila. This distinction in raw material is one of the most significant factors in Don Julio's flavour identity.

The Range

A full range, from everyday pours to top-shelf sippers. All 100% Blue Weber Highland agave from the same distillery, with the aging program doing most of the work to differentiate each bottle.

  • Don Julio Blanco - unaged Highland blanco. Cooked agave, citrus, and a touch of pepper. The benchmark Highland blanco for a lot of drinkers.
  • Don Julio Reposado - Rested in American oak for around eight months. Vanilla, soft caramel, and cooked agave. Smooth and easy to pour.
  • Don Julio Añejo - Aged for around 18 months in American oak. Richer, with toasted oak, dried fruit, and a long finish. Built for sipping.
  • Don Julio Rosado - Aged Reposado finished in port wine casks. Picks up a soft pink colour and notes of dark berries alongside the agave. Different but easy to drink.
  • Don Julio 1942 - The icon. Aged for at least two and a half years. Layered with caramel, vanilla, and roasted agave. The bottle that the brand is best known for.

History

Don Julio Gonzales Frausto Estrada was born in 1925 in the town of La Labor Jalisco. In 1942, at just seventeen years old, he acquired the La Primavera distillery in Atotonilco el Alto in the Los Altos highlands and began producing tequila commercially, an act of determination that would eventually define the category's premium tier. In those early decades, González kept his tequila close to home, sharing it primarily with family and friends rather than pursuing mass distribution. The quality was unmistakable, but the product remained largely private.

In 1985, Don Julio González's sons marked his sixtieth birthday by formally launching Tequila Don Julio as a named brand, bottling it in the now-iconic short, wide bottle that distinguished it from the tall, narrow standard of the time and allowed diners at a table to see and speak with one another without the bottle obstructing the view. The design was functional and social, a reflection of the brand's character. Following a strong reception in Guadalajara and across Jalisco, the brand expanded into wider distribution and, eventually, international markets.

Diageo acquired a majority stake in the brand in 2014 and full ownership thereafter, investing in global distribution while maintaining production at La Primavera. Today, Don Julio is one of the top-selling premium tequila brands in the world and a cornerstone of Diageo's spirits portfolio.

The big one is the brand’s role in lifting tequila from a shot drink to a sipping spirit. Don Julio was one of the first labels to push proper Highland agave at a premium price, and its 1942 release helped open the door to the modern premium tequila category.

How They Make It

Production at La Primavera begins in the hornos (traditional masonry ovens), where harvested piñas are cut into sections and slow-cooked in steam for approximately 48 hours. The extended cook converts the complex sugars in agave into fermentable glucose and fructose while simultaneously developing the roasted agave sweetness central to the house style. The cooked agave is then crushed to extract the juice, which is combined with water and transferred to fermentation.

Fermentation takes place in tanks where yeast is added to convert the sugars into alcohol, producing a sweet, lightly alcoholic agave wash before distillation. The wash is double-distilled in pot stills fitted with copper: the first distillation (the destrozado) removes impurities and separates alcohol from water, while the second distillation, the rectification, refines and concentrates the spirit to produce a smooth, characterful tequila. The presence of copper throughout the distillation process plays an important role in removing unwanted sulphur compounds and contributing to the clean, refined profile that defines Don Julio across its range. All production is certified in compliance with the Tequila Official Standard and verified by the CRT.
