Don Fulano is made by the Fonseca family at the Tequileña distillery (NOM 1146). The Fonsecas have been growing agave in the Highlands of Jalisco for five generations, so this isn't a brand built on a marketing pitch. It's built on actual fields and actual agave that the family knows from the ground up.

The family runs the show end-to-end. They grow the agave, control the production, and oversee the aging program themselves.

La Tequilena distillery is located in the town of Tequila, Jalisco, at the heart of the lowland tequila region. The Fonseca family grows all of its Blue Weber agave on its own estate in the Los Altos highlands around Atotonilco, where the red clay volcanic soils, elevated altitude, and mineral-rich growing conditions produce agave with higher sugar content and a more fruit-forward, complex character than valley-grown plants. The family prefers to harvest at peak sugar concentration rather than at a fixed age, with agave taking between six and twelve years to reach that point.

Production uses water drawn from a nearby volcanic spring, naturally filtered through rock and carrying the mineral character of the highland environment. All agave used in Don Fulano is estate-grown and estate-harvested, making it one of the few truly vertically integrated tequila producers from field to bottle.

The defining feature of the distillery is its dual-still approach: the majority of the spirit is distilled in copper alembic pot stills, while a portion passes through a copper Coffey column still, blending the richness of pot distillation with the purity and brightness of column distillation. 

That kind of grower-to-bottle setup is rare in tequila, and it's the reason Don Fulano keeps showing up in the conversation when people talk about the best Highland tequilas you can buy. 

The Range

Don Fulano Blanco is the unaged foundation of the range and the most direct expression of the estate agave, volcanic spring water, and dual-still distillation. It is clean, mineral, and fruit-forward, with fresh agave, citrus, and white floral notes and a long, precise finish. It was awarded Gold at the 2026 Agavos Awards.

Don Fulano Fuerte is the 100-proof (50% ABV) overproof Blanco and one of the most historically significant expressions in the category: released in 2002, it was the first cask-strength tequila ever produced. At full proof, the estate agave character, mineral water, and dual-still distillation all register more intensely, producing a richer, more textured version of the house style without any addition of water to reduce strength. It was awarded Best in Show Tequila at the 2024 San Francisco World Spirits Competition and Gold at the 2026 Agavos Awards.

Don Fulano Reposado is rested in a combination of American oak, French oak, and used bourbon casks, with the varied barrel selection introducing vanilla, caramel, light spice, and subtle dried fruit while keeping the highland agave and mineral character clearly present. It was awarded Silver at the 2026 Agavos Awards.

Don Fulano Anejo matures for longer in a mix of barrel types, developing additional depth, roasted agave sweetness, dried fruit, and warm oak spice. The dual-still base provides both richness and precision in the aged spirit, and the result is a layered, complex expression that sits above the Reposado in maturity and intensity. It was awarded Gold at the 2026 Agavos Awards and Double Gold at the 2025 San Francisco World Spirits Competition.

Don Fulano Imperial Extra Anejo represents the apex of the portfolio and the fullest expression of Enrique Fonseca's European-influenced barrel programme. Aged for extended periods in a selection of casks including American oak, French Limousin oak, and PX sherry casks, the Imperial develops extraordinary complexity: dark dried fruit, honeyed sweetness, rich oak, roasted agave, and a long, warming finish. It was awarded Tequila of the Year at the London Spirits Competition, one of the most significant accolades in the category.

History

The Fonseca family are descendants of a Portuguese immigrant who settled in Jalisco and has farmed agave in the highlands around Atotonilco since the late 1800s, initially supplying other tequila distillers with raw material. For generations, they were growers rather than producers, developing deep expertise in agave cultivation long before they entered distillation.

In the 1980s, Enrique Fonseca and Sergio Mendoza expanded the family enterprise by acquiring La Tequilena, a distillery in the heart of the town of Tequila with over a century of heritage. Enrique, a fifth-generation agave farmer, recognised that owning the distillery meant controlling the full process from field to bottle, but also that he needed a broader education in distillation science. He travelled to Europe to study: in France, he learned about fermentation and the creation of wine as a spirit base; in Scotland, he studied different still types and distillation approaches. That European education shaped his thinking about tequila production and led directly to the dual-still approach and the barrel-ageing programme that define Don Fulano today.

The Don Fulano brand was launched to bring the Fonseca family's estate-grown production to the international premium market. In 2002, the brand released Fuerte, the first cask-strength tequila ever produced in the category, establishing Don Fulano as both an innovator and a craftsman. Today, Enrique Fonseca is one of the largest agave landowners in all of Jalisco, and the brand remains entirely family-owned and independent.

100% Blue Weber agave

How They Make It

Harvested agave pinas are cooked in autoclaves, pressurised steam ovens that cook the agave more efficiently than traditional hornos while still converting the plant's complex inulin sugars into fermentable glucose and fructose. The cooked agave is then milled using a screw press to extract the juice.

Fermentation takes place in open-air stainless steel tanks using only natural yeast, with no commercial strains introduced. Approximately 30% of fermentations are conducted with the agave fibre (bagasse) included in the tank alongside the juice, which adds additional nutrients, residual sugars, and textural complexity to the final spirit. The remaining 70% ferment on juice alone, producing a cleaner, more mineral-forward character. The combination of both approaches contributes to the range of flavour across the portfolio.

Distillation is the step that most distinguishes La Tequilena from its peers. Between 80 and 85% of the spirit is distilled in traditional copper alembic pot stills, which preserve the richness, body, and depth of the agave character. The remaining 15 to 20% is run through a double-column copper Coffey still, a technique borrowed from Scotch whisky production, which produces a lighter, purer distillate with greater brightness and clarity. The two fractions are blended before ageing, giving the finished spirit a combination of pot-still weight and column-still precision that is unusual in the category. All Don Fulano expressions are certified additive-free.
