The Fonseca family has been in agave for five generations, working the highlands of Jalisco. They moved on to making their own tequila the way they thought it should be done, with their own agave, their own water, and no shortcuts.
Don Fulano is the family's higher-end label, and Cimarrón was built as the everyday bottle from the same stable. Same agave, same family, same process. The idea was simple. Make a proper highland tequila that doesn't cost a fortune, and put it on shelves where the big mixto brands usually sit.
It's done well for itself. Cimarrón has earned a strong reputation among bartenders and tequila drinkers who know what they're after, mostly because it punches well above its price point.
