Where Did the Ritual Come From?
The origins of the salt-and-lime ritual are debated, but the most widely accepted theory traces back to early 20th-century Mexico. At the time, lower-quality tequilas were harsh and unrefined; the salt helped numb the palate, and the lime cut through the burn. It was a practical solution that became a cultural institution.
Another theory suggests the ritual evolved from a medicinal practice. During a flu epidemic in the early 1900s, Mexican doctors reportedly prescribed patients a combination of tequila, salt, and lime as a remedy. Whether it cured anything or not, the combination clearly stuck.
Beyond the Shot: Salt & Lime in Cocktails
The salt-and-lime combination extends well beyond the shot glass. It's the backbone of the Margarita, arguably the world's most popular tequila cocktail, and appears in everything from Palomas to Tequila Sours. A salted rim isn't just aesthetic; it enhances every sip by contrasting with the drink's sweetness and acidity.
