How Tequila is Made
Tequila production follows five key stages, each of which shapes the final flavour profile:
- Harvesting — Blue Weber agave plants are harvested after 6–8 years of maturity. The piña (heart of the agave) is extracted by skilled jimadores.
- Cooking — The piñas are slow-roasted in ovens or autoclaves to convert complex starches into fermentable sugars.
- Fermentation — Extracted agave juice (aguamiel) is fermented using yeast, converting sugars into alcohol.
- Distillation — The fermented liquid is distilled at least twice to refine and concentrate the spirit.
- Ageing — Depending on the style, tequila is either bottled immediately or aged in oak barrels for weeks, months, or years.
Each decision at every stage — from cooking method to barrel type — directly influences the aroma, texture, and taste of the finished tequila.
From Agave to Bottle: The Journey of Tequila
Tequila is one of the few spirits in the world tied so closely to a single place that its name is legally protected — true tequila can only come from designated regions in Mexico, primarily the state of Jalisco. But beyond the legal definitions, what actually happens between a spiky blue agave plant in a field and the bottle on a back bar? It's a process that blends agricultural patience, old-world craft, and modern distillation science. Here's the full journey.
1. Growing the Agave
Everything starts with Agave tequilana, commonly known as blue agave (or agave azul). Unlike grapes or grain, agave isn't an annual crop; it's a slow-growing succulent that takes 6 to 8 years to mature, sometimes longer depending on soil, altitude, and climate. The plants are grown across two main terrains in Jalisco: the highlands (Los Altos), where iron-rich red soil produces sweeter, fruitier agave, and the lowlands, where volcanic soil tends to yield a more earthy, vegetal character. This terroir distinction is part of why tequilas from different regions can taste noticeably different even when made the same way.
2. The Jima: Harvesting the Agave
When an agave plant reaches maturity, skilled farmworkers called jimadores harvest it in a process known as the jima. Using a flat, razor-sharp tool called a coa, the jimador strips away the long, spiky leaves (pencas) to reveal the dense core of the plant, the piña, named for its resemblance to a giant pineapple. A mature piña can weigh anywhere from 40 to over 200 pounds. Timing the harvest correctly is critical: the jimador judges ripeness by sugar content, since the agave's stored carbohydrates are what eventually become alcohol. This is highly skilled, physically demanding work, and experienced jimadores are considered essential craftsmen in the industry.
3. Cooking the Piñas
Raw agave starch isn't fermentable; it needs to be converted into fermentable sugars first, and that happens through cooking. Traditionally, piñas are split in half or quarters and roasted slowly in brick or stone hornos (ovens) for 24 to 48 hours, then cooled. This slow method breaks down complex carbohydrates (inulin) into simple sugars and also develops rich, caramelised, roasted flavours.
Many larger producers now use stainless steel autoclaves (essentially large pressure cookers) instead, cooking the agave faster, often in 8 to 12 hours, though traditionalists argue this sacrifices some of the deep, smoky complexity that slow brick-oven roasting produces.
Some brands use a hybrid approach or diffusers to extract sugars even more efficiently, though this method is more controversial among purists for stripping out flavour nuance.
Remember these:
- Hornos (traditional stone ovens) - Slow cooking for deeper roasted flavours.
- Autoclaves (steam ovens). - Faster cooking with clean agave flavours.
- Diffusers - Industrial extraction used by some large producers.
4. Extraction: Getting the Juice Out
Once cooked, the now-softened, caramel-colored piñas need to have their sugary juice (called aguamiel or mosto) extracted. This is traditionally done with a giant stone wheel called a tahona, originally pulled by a mule and now usually motorised, which crushes the cooked agave to release the juice while leaving some fibrous pulp in for added texture and flavour during fermentation.
Most modern producers instead use mechanical shredders or roller mills, which are faster and more efficient at extracting juice, though they produce a cleaner separation from the fibrous bagazo (agave fibre pulp). The choice between tahona and mechanical milling is one of the more talked-about decisions in tequila production, often marketed as a marker of "traditional" versus "modern" craft.

5. Fermentation
The extracted agave juice, sometimes combined with some of the fibrous pulp, is transferred to fermentation tanks, which can be made of wood, stainless steel, or, in some traditional operations, stone or open-air pits. Yeast (either wild, naturally occurring yeast or a cultivated strain) is introduced, and fermentation typically takes 3 to 12 days, depending on temperature, yeast type, and whether the producer aims for a fast, clean ferment or a slower, more complex one.
This stage transforms the sugary agave juice into a low-alcohol liquid called mosto muerto ("dead must"), roughly 4–9% ABV — essentially a rough agave beer. Fermentation is where much of tequila's flavour character is built, from fruity esters to earthy, mineral notes.
Factors influencing flavour include:
- Wild vs cultured yeast
- Fermentation temperature
- Vessel type (steel, wood, stone)
Fermentation creates the aromatic complexity of tequila.
6. Distillation
By Mexican law, tequila must be distilled at least twice (though some producers do a third distillation for extra smoothness). This typically happens in copper or stainless steel pot stills.
- First distillation produces a cloudy, low-proof liquid called ordinario (around 20–25% ABV).
- Second distillation refines this further, separating the distillate into three parts: the heads (high-alcohol, sharp, and often discarded or redistilled), the heart (the desirable, balanced middle cut that becomes tequila), and the tails (lower-alcohol, heavier compounds, also usually discarded or redistilled).
The result is a clear spirit typically around 55% ABV, which is later diluted with purified water to bottling strength (usually 38–40% ABV).

7. Aging (or Not) — The Tequila Categories
This is where tequila branches into its familiar style categories, defined by how long (if at all) it rests in oak barrels:
- Blanco (Silver) — Unaged, or rested less than 2 months. Bottled shortly after distillation, showcasing the purest, most vegetal agave character.
- Reposado — "Rested" for 2 months to 1 year in oak barrels, picking up light vanilla, caramel, and wood notes while retaining agave forwardness.
- Añejo — Aged 1 to 3 years in oak, developing deeper, more whiskey-like complexity — dried fruit, spice, and rounder texture.
- Extra Añejo — Aged more than 3 years, a relatively newer official category (introduced in 2006) offering the richest, most sherry/bourbon-adjacent character.
- Joven (Gold) — Technically not an aging category but a blend, usually mixing blanco with a small amount of aged tequila (or, less reputably, with caramel colouring and flavouring additives) to mimic an aged profile.

9. Bottling and Certification
Every legitimate bottle of tequila must be verified by the Consejo Regulador del Tequila (CRT), Mexico's regulatory body overseeing the Denomination of Origin. This ensures the product was made from a minimum percentage of blue agave (100% agave tequilas must use only agave sugars, while "mixto" tequilas can blend in up to 49% other sugars), produced within the designated geographic zones, and follows the legal production standards.
NOM numbers (Norma Oficial Mexicana) on the label identify exactly which distillery produced the tequila, useful information for tracing a bottle back to its source, since many brands are actually produced at the same facilities.
From there, bottles are labelled, sealed, and shipped out to markets around the world, the final step in a process that, depending on the agave's age and the tequila's aging category, can span anywhere from 8 years to over a decade from planting to pour.
