Still type is one of the biggest flavour levers in tequila production, arguably as significant as cooking method. Whether a distillery uses copper pot stills, stainless steel stills, or column stills directly and measurably affects the spirit in your glass. Here's how the main types break down.
What Is a Still and Why Does It Matter?
A still is the vessel used to distil fermented agave juice (or tepache) into tequila. The material, shape and method of distillation all influence which flavour compounds are retained, stripped or transformed, making still selection one of the most consequential decisions a distiller makes.

Copper Pot Stills (Alembic)
The traditional choice is still dominant among premium and craft-focused producers.
- How it works: Batch distillation, each run is heated, vaporised and condensed, then the still is emptied and reloaded.
- Flavour impact: Copper actively reacts with the spirit during distillation, stripping sulphur compounds (which cause harsh, rubbery off-notes) and softening harsh congeners. The result is a rounder, more textured spirit with a pronounced cooked-agave character.
- Trade-off: Slower, more labour-intensive, lower yield per run. Requires a skilled distiller to make precise cuts (heads, hearts and tails) as each batch varies slightly.
- Typical result: Richer mouthfeel, greater aromatic complexity and more batch-to-batch character, the hallmark of artisanal, higher-end tequilas.
Stainless Steel Pot Stills
Functionally similar to copper pots, also batch stills, but without copper's chemical reactivity.
- Flavour impact: Without copper to scrub sulphur compounds, distillers must make very precise cuts to avoid harshness. Stainless preserves a cleaner, more transparent agave character since less is chemically altered during the run.
- Common use: Often paired with copper plates or copper mesh inserted into stainless columns to capture some of copper's benefits without the full cost and maintenance of a copper still.
- Typical result: Crisper, more vegetal, sometimes sharper spirit if cuts aren't precise.
Column (Continuous) Stills
Used mainly by larger, high-volume producers, particularly for mixto tequilas or lighter blanco styles.
- How it works: Continuous distillation through a tall column with multiple plates. The spirit moves through stages of vaporisation and condensation in a single uninterrupted flow rather than in discrete batches.
- Flavour impact: Produces a higher-proof, more refined and neutral spirit. More congeners and esters are stripped out compared to pot distillation, resulting in a lighter, less agave-forward character.
- Trade-off: Far more efficient and consistent at scale, but sacrifices the depth and personality that batch pot distillation delivers.
- Typical result: Cleaner, lighter, more mixable spirit — common in mass-market blancos and tequilas destined for cocktails rather than sipping.
Hybrid Approaches
Many producers combine methods to balance efficiency with complexity. A common approach is a first distillation in a pot still (to preserve agave character), followed by a second distillation in a column still or a copper pot with reflux. Others double-distil entirely in copper pots for maximum traditional character — a hallmark of higher-end expressions.

Still, type is one of the more tangible, explainable factors that separate a cheaper bottle from a more expensive one, beyond just aging. When a brand highlights copper pot distillation on their label or website, it's a genuine signal of craft intent and flavour investment.
