Redbreast 12 Cask Strength Pot Still Irish Whiskey
Overview
"Liquid Gold": Jim Murray
Redbreast 12 Cask Strength takes everything great about the standard Redbreast 12, triple-distilled Single Pot Still spirit, a minimum of twelve years in a mix of ex-bourbon and Oloroso sherry casks, and strips away the two things that tame it. No water is added to bring the proof down, and the whiskey isn't chill-filtered. What's in the bottle is what came out of the cask.
The result is a bigger, bolder, more textural version of a whiskey that's already earned its place on the top shelf. Released in limited batches with batch numbers on every label, it's the Redbreast that serious whiskey drinkers reach for when they want the full picture, and it's the one that routinely wins "World's Best Pot Still" at international competitions.
The DISTILLERY
Distilled and matured at Midleton Distillery in County Cork, home of Irish Distillers and the last remaining large-scale producer of true Single Pot Still whiskey. The Redbreast name dates back to the early 1900s, when bonder W&A Gilbey of Dublin sold Jameson-distilled whiskey under the Redbreast label, named for the robin that was the chairman's favorite bird.
Today the brand is owned by Irish Distillers (part of Pernod Ricard) and shepherded by Master Distiller Kevin O'Gorman and Master Blender Billy Leighton. The Cask Strength release is hand-selected batch by batch, giving it a slightly different character every time, and a bit of collectability built in for people who like to compare releases.
Why We Recommend It
We recommend Redbreast 12 Cask Strength for customers who want:
- The full-strength, unfiltered expression of Ireland's most celebrated Single Pot Still whiskey
- A bigger mouthfeel and more concentrated flavor than the standard 40% Redbreast 12
- Batch-specific releases with individual batch numbers — something worth collecting
- The flexibility to add water to your own taste and watch the whiskey open up in the glass
If you already love the standard Redbreast 12, this is the next step — same DNA, dialed up. If you're coming from sherried Scotch at cask strength, this is the Irish equivalent you've been hoping someone would make.
Production & Craftsmanship
| Style | Single Pot Still Irish Whiskey |
| Mash Bill | A mix of malted and unmalted barley — the hallmark of traditional Irish pot still |
| Distillation | Triple distilled in copper pot stills at Midleton Distillery |
| Maturation | Minimum 12 years in a combination of ex-bourbon American oak barrels and first-fill Oloroso sherry Spanish oak butts |
| Filtration | Non-chill filtered, natural cask character preserved |
| Bottling Strength | Natural cask strength, typically ~55–58% ABV (varies by batch) |
| Batch Release | Released in numbered batches; every bottle carries its batch number |
| Country of Origin | Ireland |
Cask strength and non-chill filtered isn't just marketing — it genuinely changes the drink. Without filtration, the natural oils and fatty acids that give pot still whiskey its creamy texture stay in the bottle. Without dilution, the sherry and oak notes come through at full volume. This is the whiskey exactly as the blender tasted it when the batch was signed off.
Tasting Notes
Nose
Big, rich, and concentrated. Dark dried fruits, raisin, fig, date, sit alongside toasted oak, brown sugar, and a generous layer of Oloroso sherry. Warming spices, leather, and a hint of dark chocolate emerge with a little time in the glass.
Palate
Massive, oily, and mouth-filling. Pot still spice arrives with real heat, black pepper, clove, cinnamon, layered with Christmas cake, marzipan, dark cherry, and bitter orange peel. The Oloroso influence is deep and nutty; the oak tannins give it backbone. A few drops of water reveals sweeter honey and vanilla notes.
Finish
Exceptionally long and warming. Lingering sherry richness, dark fruit, and pot still spice trail off slowly. Oak tannin and a gentle bitterness keep everything in balance. The kind of finish that rewards you for sitting with it.
What Makes This Whiskey Special
How to Enjoy
Start neat in a tulip glass and let it sit for a minute or two — this is a whiskey that opens up with a little air. Add water a few drops at a time to tune the strength to your taste; you'll find different notes come forward at different dilutions, which is half the fun of drinking cask strength. Ice works too if you prefer, and it's a serious upgrade in a classic whiskey sour or an Irish Coffee where the concentrated flavor cuts through. But honestly — pour it neat, take your time, and let it show you what it can do.
