WhistlePig took a 12-year-old, 95% Canadian rye and handed it over to three of the world's great wine cask traditions: Madeira (63%), Sauternes (30%), and Port (7%). At 43% ABV, this sits softer than WhistlePig's younger expressions, wearing that gentleness as a feature. Twelve years of age and three styles of wine cask have transformed the underlying rye into something altogether more layered.
Nose: Raisins, dried cherries, stewed plum, maple syrup and baking spice, with desiccated coconut and a whisper of fresh sawdust.
Palate: Tropical melon and candied citrus peel give way to caramel, red berry, and a subtle roll of oak spice. Smooth and full-bodied.
Finish: Long and warming — dark chocolate, vanilla, toasted almond, and a final lick of peppery rye spice.
