He has amalgamated a Sherry cask, for which he is famous and Peat and has created the link between Speyside and Peat that people have been waiting for.

They have created a whisky that carves a path for those who think they don't like peat, or find other expressions too smokey. This is a Speyside peat, it doesn't have the power of a traditional Islay peaty dram.
The Meikle Toir, The Sherry One is made using mainland peat from St. Fergus, the sweet phenolic content of the whisky amounts to 35 PPM. A lengthy fermentation period of 160 hours results in a fruit-forward spirit that lends itself perfectly to ageing in the finest Sherry oak.
Meikle Tòir, The Sherry One is 5 years old BUT 5 years is often the year where the peat notes in whisky are regarded as the most prominent, with the phenols gradually becoming less prominent through interaction with the cask and development of other flavours from the wood.
