It is then finished for one extra year in first fill sherry butts which have been seasoned with oloroso sherry from the prestigious Bodegas Lustau in Jerez, Spain.
Nose: A welcoming mix of spiced apple juice, dried fruits, dusty oak, orange peel, pear drops, crystalised ginger and creme caramel
Palate: Sweet, fruity and creamy. Some classic pot still prickliness at the start and some touches of sappy oak, tart citrus, dried fruits and chocolate tofffees.
Finish: Nice development in the mouth with a smooth transition from tart, bittersweet fruit to headier, chocolate, spice and sappy oak flavours.
